		<description>I think these would freeze beautifully - and probably thaw pretty quickly too. The tofu is a great idea - will have to try that!</description>

		<description>Yeah, the grocery shopping thing is problematic. For me, not only is the number of people drastically different, but the whole method of eating is, too. 
I wonder if you could make the patties and freeze them so you&#039;d have them some desperate evening. My sister steams or sautes greens then freezes them to throw into soup or stirfries or whatever later: take up way less space when wilted. I make spanikopita with too much spinach. Big casseroles of it, again, for the freezer, also, smaller turnovers to bake 1 or 2 at a time. (And add crumbled tofu to it instead of ricotta.)</description>
